This brewery and distillery produces "authentic rice shochu" made from highly aromatic moromi, which is reminiscent of ginjo sake, and is distilled under reduced pressure. They also produce plum wine made from this shochu and unblended shochu, as well as "authentic kasudori shochu" made from a long period of reduced pressure distillation using only fresh lees from the sake-making process.
